Dr. Milen Shah – is a NHS doctor for many years and is a GP Partner in a large practice in London serving a variety of patients. He follows up a range of long term patients from children, teens, adults, with a particular interest in elderly and end-of-life care. From a spiritual background, the work is deemed as “seva” (service) with an emphasis on communication skills with compassion and understanding.

For the most part of her life, Dinah did not know how to cook but she loved to eat! She discovered yoga in 2005 and this led her on the path of wellness. One of the things she learned along the way is preparing her own food. She transitioned to a plant-based diet and learned about the concept of life-force nutrition. Founded on the principles of Traditional Chinese Medicine, this will help us understand why we eat and how food helps us have more energy.
She’s not a nutritionist nor a chef but she will be sharing with us how she applies these principles in her food-preparation and cooking. Discover how food can give you more energy through life-force nutrition.

 Zainab Arafa is a housewife and a mother of three children. She is an Egyptian living between Egypt and the UK.
Zainab worked for 13 years in the Human Resource field after graduating. She always had her best time in the kitchen. She enjoys cooking and expressing her love through making exciting food for her family, friends and loved ones. Well into her 30s, Zainab realised her passion for Nutrition and Health, that combined with her passion for cooking ever since her teen years were a perfect match!
Zainab is an amateur chef with a social media presence best known for her easy to make nutritious recipe videos. She is planning to pursue her professional Culinary Arts studies.
Today she will be making Easy Okra Tajin the Egyptian way.

Following nearly 30 years working in the city, last year, Min decided to go down another path. He teamed up with some friends to start an urban vertical farm, called Mini Herbs, based in Enfield, London. The mission of the company is to raise awareness of the power of growing locally, high quality food, created in a sustainable and environmentally friendly way and selling Michelin star quality micro herbs to restaurants. Min would like to take us on the journey he has been on for the last 12 months and further explain the wonders of micro-greens!

Varsha Kumari Mistry has worked as a Forensic Practitioner with the Metropolitan Police Service in London for over 33 years.

She trained as a Fingerprint Expert. Her work involves examining homicide, serous crime scenes, vehicles and exhibits in a forensic laboratory for evidence recovery purposes. She presents forensic evidence in court.

She is also the current deputy chairperson for the Metropolitan Police Hindu Association, which involves voluntarily offering support to the membership, Met Police Service and communities of London. She is involved in welfare support of colleagues and promoting well-being. As a proud mother of three children, spirituality and well-being are very much at the heart of both her family and professional life for bringing out the best in all.

Seema was born and raised in Nairobi, Kenya. Her culinary interests developed at an early age founded on a family food business. Extensive travel in Africa, India and South East Asia have allowed her to follow her culinary passion and grow her knowledge on the effects of food on the mind and body. Using secret skills handed down from grandmother to granddaughter and drawing from the ancient practices of Ayurveda and Mayan wisdom, Seema has been able to curate healing spice blends, immunity enhancing yogic teas, self care prescriptions and other wellbeing foods and beverages. Seema has successfully shared her skills and knowledge with corporates and individuals over many years in Hong Kong and Singapore and is now based in Oxford.

This Sunday, Seema will prepare, live, the following:
Thai inspired Sesame lime chopped salad Nutty and filled with flavours.
Thai yellow curry paste mild, versatile and boasts the anti-inflammatory elements of turmeric and black pepper.
Vegan Thai curry – super easy and quick to make once your curry paste is done.
Garlic lemon grass fried rice – fragrant and aromatic.

Ashwani Kumar was born and brought up in Shimla, North India. He started his journey as a trainee chef with Le Meridian, Delhi. He then joined TGI FRIDAY’s in Bangalore. Ashwani later moved to Mumbai and joined Taj Lands End for 3 years in various kitchens. He then moved to United Kingdom, where he has worked in various prestigious hotels as chef. He became head chef at Radisson, where he served in various establishments including London Oxford street and from here on worked with doubletree Hilton, Finest Canary Riverside Plaza, and many others.
After the Lockdown started, Ashwani opened his own Business named Sanskriti Ashwani’s Food in Guildford,
catering for Vegetarian and Vegan dishes only, which is based on Fresh Farm to Fork approach

Having grown up around the most exquisite home cooks, Shivani has always been inspired to cook and experiment in the kitchen. However it wasn’t until Shivani became a mother, and her daughters weaning journey started that ignited the desire to really take this hobby into a more serious direction. Understanding ingredients and what part they play in our diet especially for a growing child became so much more important than just the flavour it provides.
The lockdown gave Shivani the time to start documenting her recipes and share them with those who wanted inspiration in vegan and veg cuisine not just for toddlers but for the whole family.

Today’s recipe is the traditional Mexican loaded nachos with a baked and veggie twist. Additional vegetables mixed into the key component enhancing the snacks nutritional value. Great for the entire family especially for getting extra vegetables into our fussy toddlers. Fun food with great flavour!
