Tina Patel

Taste of Mexico

Tina Patel moved to England after getting married, she was born and raised in Kenya, where her love for cooking stemmed from her mother, who was a very talented cook. From a very young age she learnt to cook, and her skills and knowledge of cooking have been growing ever since. Tina takes inspiration from online recipes, her mother’s cooking, and many dishes she makes are creative and intuitive. She enjoys cooking a wide variety of cuisines including Indian, Mexican, Chinese, and Italian.

Tina will demonstrate how to make:

Tina’s Tacos
The name says it all! Crunchy home made and delicious. No Mexican fiesta is complete without this delicious recipe.
Tina’s Bean Chili
Another gem – Tina’s bean chili made with Seema’s (no longer a secret taco spice mix) makes the perfect stuffing to compliment those crunchy tacos.
Mama’s Guacamole Goodness
Brimming with healthy fats this creamy, lightly spiced avocado guacamole is a sacred recipe handed down from mother to daughter and makes the perfect topping for the tacos.
Esquites
Buttery, smoky spicy, tangy and delicious Esquites is traditionally enjoyed during the festival of “cinco de mayo” – an annual celebration held on May 5, which in fact commemorates Mexico’s victory over the French empire at the Battle Of Pueblo in 1862.
Esquites literally translates to corn in a cup, however in this recipe besides topping the corn with “queso!” Or cheese Seema brings in a few healthy rainbow elements making the salad a  perfect side to any Mexican fiesta.

Taste of Mexico

Seema Bhatia was born and raised in Nairobi, Kenya. Her culinary interests began at an early age founded on a family food business. Seema’s passion along with her extensive travels in Asia have allowed her to follow her culinary passion and grow her knowledge on food as medicine.
Seema will demonstrate how to make:
Not so naughty milagro rosé
A splash of pomegranate juice, rose infused syrup and lemon juice topped up with tonic make  this mock cocktail delicately light, dangerously drinkable and visually appealing.
A heathy with a “little bit of naughty” Salsa Roja
The two most famed  salsas in Mexico are salsa roja, a red salsa prepared with tomatoes and the salsa verde, a green salsa prepared with tomatillos. Both  salsas can be enjoyed with a wide array of Mexican dishes and every family has its own recipe.  This very easy
recipe for an authentic salsa roja screams happiness in a bowl, it’s super healthy and if you like you may wish to add the little bit of “naughty” as Seema will demo in this recipe
